Yield: 12 cupcakes
Cupcakes ingredients:
- 3 ripped bananas
- 120 gr unsalted butter
- 134 gr granulated sugar
- 2 eggs
- 8 gr baking powder
- pinch of salt
- 50 gr chocolate chips (or more if you prefer!)
- 240 gr all-purpose flour
Vanilla buttercream frosting ingredients:
- 170 gr unsalted butter at room temperature
- 330 gr powdered sugar
- 3 tablespoons of milk
- pinch of salt
- vanilla extract
Steps for the cupcakes
Use a stand mixer or an electric whisk.
- Preheat the oven to 180°
- Mix softened butter with sugar
- Add eggs to the mix
- Smash the bananas with a fork and add it to the mix
- In an additional bowl, whisk together flour, baking powder and salt
- Add the dry ingredients to the eggs and mix
- Add the chocolate chips to the mix (or 2/3 in the mix and 1/3 over the top of the muffins)
- Divide the batter evenly between 12 muffin cups*
- Bake for 25/30 mins until a toothpick insert into the center of the muffin comes out clean
*this time I sprayed the paper liners with cooking oil and for the first time the muffins came off the paper liner easily
Steps for the frosting
Use a stand mixer or an electric whisk.
- Beat butter for 2/3 minutes at medium speed until smooth
- Add powdered sugar, vanilla, salt and milk and turn to high speed for 2 minutes
- If the mixture is too runny , add more sugar a little at the time. If is too thick , add more milk
- Transfer the frosting to a plastic bag or similar tool for piping it evenly on the cupcakes if you want to have a nice decoration. Alternatively you can use a spoon
When the muffins are cooked, let them cool completely before decorating them.
